Food Faves & Finds No.1



I found this great recipe for Chicken Tortilla Soup at Living by Faith, Hope and Love. It was terrific! I added a can of rinsed and drained black beans. This is a great crock pot meal to have on hand during these final (we hope!) frigid days of winter. And I would guess it's between 150 & 200 calories per cup. Yum!

At my First Place meeting last week we were challenged to visit a new or unfamiliar area of our grocery store this week. There really isn't an area I'm not familiar with (ha!) but there are some items that I have never tried before. I decided that with each trip to the store I would choose something from this category to bring home--just to keep things lively.

This week I attempted to prepare an artichoke. Yes, there is another way besides opening a can. I could kick myself for not taking pictures! Quite a process. Really the only good thing I can say about it is that the vibrant green color would be great on a wall in my house. It was way too much trouble (maybe I did it wrong) and it tasted like dirt. Or worse.

Artichokes are best cooked steamed in a steamer. Depending on the size of the artichoke dictates the amount of time you should steam it. Then when it's done use some low or non fat mayo on the 'meaty' part and scrape it off with your teeth. You aren't supposed to eat the whole leaf. Or some people eat it with butter but that makes it significantly more fattening and caloric... :)
