Mississippi Mud, Be Mine!



I declare it from the rooftops:

"I am having Mississippi Mud Cake for Valentine's Day!"

So sue me.

I have given this decision much thought. Mississippi Mud Cake is my favorite dessert. It is a magnificent example of southern confectionery at its finest. I made one a few weeks ago for a friend and had ample opportunity to partake of it, but I gracefully declined. So I know that I am capable of not eating it when it's within my reach. Therefore I believe I'm ready to have my first on-diet dessert.

I feel very good about my decision to make it just so I can have one, solitary, ooey, gooey piece. That's all I want, one piece. Not a teeny weeny piece. Not a gargantuan piece. I will have a 2.5" x 2.5" piece. Like I said, well thought out.

In addition, you should know that I'm not going to save up calories or anything. I'm not going to work out extra either. I'm not even going to hate myself in the morning. No. I'm just going to eat my Mississippi Mud with a big honkin' smile on my face.

Ah, this really shouldn't make me so happy. But it does.

I think that is an excellent decision actually. There is no reason why you can't lose weight, while enjoying foods you love. You enjoy every last crumb :)

I've never had Mississippi Mud Pie, but I can imagine it's very good. Enjoy your Valentine's Day gift, you deserve it!

Enjoy! I'm reading a book called "The Skinny" and that is their mandate. Don't eat everything you want when it comes to high calorie food. Eat only the food you really, truly love and enjoy every morsel of it. Don't feel guilty for it. Eat and enjoy. However, don't eat a bunch of it. Eat enough to be satisfied, but portion control is everything in making their plan work. Sounds good to me!

Where did you get your Mississippi Mud recipe? A while back some friends made it for us and I never got their recipe. Maybe it's better that way! ;)

Your attitude is one of the healthiest I've seen. Good for you and enjoy your treat! And I'm GLAD you're not saving up the calories for it -- then it really isn't a treat, is it?

Too funny! Because I just happen to have the same plan as yours for Valentine's Day! We are going to a Murder Mystery Dinner & I have decided I will be having the ooey-est gooey-est piece of chocolate cake that they have on the "cake bar" that night! I deserve it! :)
